This 3-day course provides you with a comprehensive and practical understanding of HACCP principles, the Food Safety Management Systems ISO 22000:2018, and the National Food Safety Auditor (NFSA) scheme.

Learn how to identify, evaluate and control food safety hazards within your organisation so you can develop, implement, maintain, improve, and manage a system that demonstrates your commitment to food safety.  

This course meets the formal HACCP training requirements of Australian Retailers, GFSI Standards (BRC, SQF) and other relevant Standards. 

This course has the equivalent of 24 Continuing Professional Development (CPD) points.

Course content

This 3-day course will leave you with knowledge of the ISO 22000 Food Safety management systems standard. It can be joined to an additional module: ‘Becoming a Skilled Lead Internal/External Auditor‘ where participants learn how to conduct management systems audits in accordance with ISO 19011:2018 Guidelines for Auditing Management Systems.   • HACCP Steps 7 to 12 including Workshops to determine and establish Critical Control Points (CCP) including: critical limits, monitoring systems, corrective actions, verification & validation requirements, documentation and record keeping

Qualification

This course in internationally recognised and is certified by Exemplar Global. Upon successful completion of the course, you will receive a Certificate of Attainment with the following units of competency:

  • Exemplar Global – FS Food Safety Management Systems
  • Exemplar Global NFS-1 – Assess Compliance with Food Safety programs
  • Exemplar Global NFS-2 – Communicate Food Safety Audits
  • Exemplar Global NFS-3 – Conduct Food Safety Audits
  • Exemplar Global NFS-4 – Identify, Evaluate, and Control Food Safety Hazards
  • Exemplar Global HP – Developing HACCP Plans

Prerequisites

There are no prerequisites for this course. 

Assessment

All assessment is conducted during the course and there is no homework. Throughout the course, you will complete:

  • Case study review
  • Evaluation of Food Safety audit scenarios

The final piece of assessment is a short exam.

You will prepare, complete, and hand in copies of their assessments during class – there is never any homework!

  •  wish to consolidate any informal experience you may have gained in your career
  •  If your existing FSMS is not giving you the benefits it should

Prior experience in auditing and management systems is not essential.

    Study Pathway – Where to from here?

    If you wish to become a registered third-party, or external Food Safety Management Systems auditor with Exemplar Global, you need to have obtained the competency units from this course and the additional Exemplar Global competency units of AU and TL (via our Becoming a Skilled Lead Auditor or Management Systems Lead Auditor courses).

    Once you have obtained these units of competency, you can follow the qualification-based path to become a registered third-party or external auditor.  A full explanation of the requirements to become certified with Exemplar Global can be found here, or contact us for more information.

    Additional Exemplar Global competencies for Management Systems auditing (Exemplar Global AU and TL) may be added during the same week of training, or attended separately. Competencies for Quality Management Systems (Exemplar Global QM) Environmental Management Systems (Exemplar Global EM) and/or OH&S Management Systems (Exemplar Global OH 45001), and Information Security Management Systems (Exemplar Global IS) may be attended separately.
